I love prawns but I usually only get to eat the frozen kind because fresh prawns are often pricey. Frozen prawns are great in curries but if you want the full flavour, fresh is better.
I was delighted to fall upon a great offer at M&S where you can get a whopping 20 large prawns for only €8.
Now that I had these delicious delicacies – what to do with them? I decided to keep it simple and make Peri-Peri Prawns. This recipe serves four and is great with a big chunk of bread to soak up the sauce. Yum.
Peri-Peri Prawns
Ingredients:
- 20 large prawns
- 200g butter
- 2 teaspoons crushed garlic
- 2 tablespoons lemon juice
- 2 tablespoons peri-peri sauce (recipe below)
- Salt and milled black pepper
For the Peri-Peri Sauce
- 50 g red chillies, very finely chopped
- 5 cloves garlic, crushed
- 500 ml olive oil
- Pared rind of 1 small lemon (use a vegetable peeler to remove the skin in thin strips)
- Combine the ingredients for the sauce together and mix well. You can make the sauce ahead and store it in the fridge; the flavour improves with age, reaching its peak at two weeks.
- Slit prawns down their backs and devein. Heat the butter gently and add the garlic and lemon juice. Don’t let the garlic burn. Add prawns and peri-peri sauce.
- Sizzle for 4-5 minutes, turning frequently, until cooked. Season with salt and pepper.
