Happy St Patrick’s Day, to be sure, oh ho. We’re taking the day off here at CheapEats, in order to partake of the parade, the pints and the fights. We don’t find that we do much cooking on Paddy’s Day, but will leave you with this recipe for an Irish favourite, just in case you have a tad more self-control than us.
Colcannon
Ingredients
- 1kg potatoes, peeled and boiled
- 250g kale or cabbage, cooked till tender and finely chopped
- 1 small bunch spring onions, finely chopped
- Milk
- Butter
- Salt and black pepper to taste
Instructions
Mash it all together. Ireland!
