Rercy’s Mince Pies
The cheapest mince pie is a home-made one. Buying ready-made mincemeat and pastry can conserve the cash and save you hassle. For the cheapest, easiest, light fluffy mince pie option, try these festive gems.
Makes 12 mince pies
Ingredients
- 1 pack of medium size pastry cases (Jus Rol vol-au-vent are ideal), defrosted if required
- 1 jar of mincemeat
- 1 egg
Directions
- Preheat the oven to the instructions on the pastry pack.
- Place frozen pastry cases on a baking tray 1cm apart and carefully glaze rim and base with beaten egg.
- Place tray in top half of oven. After 8 minutes turn tray around and continue baking for a further 5 minutes.
- Take tray out of oven and fill each case with one large tablespoon of mincemeat.
- Return to the oven for a further 4 minutes until mincemeat is cooked through.
- Cool on a wire rack to maintain crispness.
