I call these Bea’s biscuits because they’re so easy my seven year old, Bea, can make them. It’s a good task to give kids after school or on the weekends. You can weigh out the ingredients with them and let them take over as if it’s playdough. Except you eat it instead of forcing it back into small tubs. Which is nice.
You can also add orange/lemon zest or chocolate chips.
Ingredients (makes about 16 biscuits)
- 50g caster sugar (plus a little extra for topping)
- 100g butter
- 125g self-raising flour (or add 1 tsp baking powder to plain flour)
Instructions

Put everything in a bowl and rub together.

Roll into a large sausage shape.

Cut the sausage into 16 equal pieces (if little warm hands have made it too soft then wrap the sausage in cling film and leave in the fridge to firm up for a while before cutting).

Roll the slices into balls and gently press with a fork to make biscuit shapes.

Bake at 180c for 10 mins (or until a pale golden colour)
- Sprinkle with caster sugar, let cool a little and place on a wire rack.
