Smoked salmon is the essential Christmas starter for my family. This year, M&S is launching a unique selection of Irish smoked salmon for Christmas produced exclusively for Marks & Spencer by Dunn’s seafood in Finglas, Co Dublin.
The Blackened Irish Stout Smoked Salmon (€6.99) is painted with O’Hara’s Irish Stout produced by the Carlow Brewing Company. The stout reduction is brushed on and cured for eight hours before lightly smoking over oak wood chips, resulting in the salmon having a dramatic but subtle flavour from the rich, malty sweetness of the stout. A truly delicious salmon with depth of flavour and a strong smoked taste.
Another distinctly traditional Irish product to tempt you this festive season is the Hot Toddy Smoked Salmon (€6.99). This will be available in stores from the end of November. Here, the Irish Organic Salmon is coated with a hot toddy reduction produced by Ireland’s oldest independent distillers – Cooley Distillery, which has won over 250 international medals for its quality of whiskey. The salmon is then smoked over oak wood chips giving the salmon a very distinctive flavour: ideal to share among friends for Christmas or New Years.
