This is a great example of the affordable luxuries that we were talking about here before.  The duck confit is extremely rich and delicious,  four legs will comfortably feed four people, and a tin only costs €12.43 in their online shop.  The tins will keep for a long time in a cupboard, and the fat that the legs are packed in can be saved to use for roasting potatoes.

confit-de-france-mealLaurent of Confit De France sent us four legs to try, which I roasted with baby new potatoes, and served with red cabbage with wine, redcurrant jelly and apple (from M&S for about €3).  It was an extremely flavourful and satsifying meal, a real treat.  A quick Google search for duck leftovers turned up some incredibly luxe options: I did a risotto with roasted butternut squash and shredded duck.  I also ended up with a large mayonnaise jar full of strained duck fat to use for future chips and spuds.
